   There is never much to say about my happenings on weekdays. The days always consist of school, nannying, homework, studying... and very little time in-between. I have such a routine down, that I almost block anything else out from my schedule  Occasionally I will grab a drink or meet up with a friend during an evening, but that is still rare. This summer will be rather the same as well, with taking two courses and nannying more hours during the week. 
   I felt like I should document this day because Kansas City had quite a warm day today, a little above 80 degrees (although it felt like more in a car with no air conditioning.. and none turned on in the house!). If I could have things my way, this would be the warmest it would get all summer. Wait.. this is not even summer yet. Yep, a count down to another hot season has begun. Spring, please stay a little longer?!

   I haven't had a Sunday in so long that has been warm. Warm even to the point that when we go on walks, my boyfriend comments on the heat. Warm enough that a frozen drink sounds good, strawberries get sticky in the car, and there are no sweaters stuck in my messager bag. The weather even allowed for some outdoor reading and relaxing. 
   The farmers market was rather full of life today, which is excepted in the warmer months of the year. I miss living within biking distance, it allowed me to go every weekend with hesitation. I was out and about for awhile today, but I suppose my time is spent and I must get back to studying for upcoming finals. That's why o love Sundays though, always enough time for everything.

   My mind sort-of blanked about all the rain that the springtime brings. I have been thinking to myself lately about "why all of these rain showers all the sudden" and "this rainy weather is destroying my shoes", which is exactly what April weather should be bringing. Although the rain has canceled my camping plans for the weekend (even my alternative camping plans for if we did not go!), I do still love this time of the year. All the flowers are beginning to bloom, planting/gardening time, and no more thick winter coats everyday. 
  Although I am not out exploring in the wilderness at the moment, I still had the constant urge to be somewhat "outdoorsy" and take a walk through a local garden. The rain had passed by in the early morning, but still too wet for camping and too chilly in the evening for sleeping. I suppose my "few day getaway" will have to hold off for another week or so.. oh, this rainy month.

made at home: kitchen cabinet granola bars



"From the Kitchen Cabinet" Granola Bars

  • 3 cups of quick-oats
  • 1/2 of cereal (I used Honey Bunches of Oats with Almonds) 
  • 1/2 cup of chopped nuts (I used walnuts) 
  • 1/4 cup of shredded coconut
  • 1/4 cup of vegan chocolate chips
  • 2 tablespoons of ground flax seed
  • 1/4 cup of Earth Balance
  • 1/2 cup of brown sugar
  • 1/4 cup of peanut butter
  • 1/4 cup of maple syrup 

   On medium heat, whisk the Earth Balance, brown sugar, peanut butter, and maple syrup in a sauce pan until melted. In a medium bowl, mix together the quick-oats, cereal, nuts, coconut, chocolate chips, and flax seed. After the stove top mixture has cooled slightly, stir into the dry mixture. Place the bar mixture into an 8 inch square cake pan (that is coated with cooking spray) and pat down with a spatula. Store in the refrigerator. 



   I am always gathering ideas how I can save money on groceries. With having a special diet, and no wanting to only consume 'rice and beans' every evening, I tend to spend a large amount on weekly groceries. I eat about box of granola bars a week, because they are a healthy and convenient snack for always being on the go. I decided to try and make my own bars today, just out of random things that were in my kitchen. These turned out so delicious  I will defiantly be making my own granola bars from now on.
