made at home: spiced coffee popsicles

Spiced Coffee Popsicles

  • 1/2 cup chilled strong coffee
  • 1/2 cup of non-dairy milk (I used almond milk)
  • 3 tablespoons of brown sugar
  • 2 tablespoons of honey
  • 1/2 tablespoons of cinnamon
  • 1/4 of nutmeg
  • 1/4 tablespoon of ginger

Whisk all ingredients in a medium sized bowl (combine in the blender if desired). Place into popsicle holders (I bought mine at the dollar store) or into dixie cups and popsicle sticks placed in the center. Put into the freezer for at least three hours to freeze completely.

These past few summer days have been so warm, and there is not a better snack than an ice cold popsicle for cooling off. I have been spending all my free time unpacking and transporting items for my new apartment, and I wanted to make a simple summer snack for those afternoons (and yes, these photographs are taken on my new balcony!). Combined with coffee for an extra boost in energy  these delicious popsicles will be a treat I make over and over again.

  11. Yummm! I made a coffee "frappacino" the other day and it was delightful. I'll take about anything sweet with coffee, so this will have to be my next go-around!
